Honey Dijon Grilled Chicken

I make my weekly grocery store runs on Saturday or Sunday mornings, and every week, without fail I call my husband at work (he works funky hours) and ask if he has any special requests.  The answer I get is usually something like, “Um…maybe some Salmon, Cod  if they have it, um…chicken breasts…club soda, bananas…salad stuff…you know…whatever…the usual.”

I’m not really sure what’s more frustrating, the fact that I get the same (unprepared) answer every single week, or the fact that I continue to call him and expect a different answer.

I mean, honestly, I’ve known the guy for a LONG time, I know what he’s going to say, so why even call?  He’d say that I just want to hear his voice.

Ok, maybe.  He’s a police officer, what can I say?  I may or may not just call occasionally to make sure he’s ok.  #overprotective

Anyway, this week, he threw me a curve ball.  He said NOT to buy chicken.

Um, excuse me?

Apparently, he’s sick of it.  But here’s the thing.  I had a new chicken recipe that I really wanted to try.

So, I bought chicken.  Whoops.

And, I loved the recipe.  I think you will, too.  It has three things going for it:  one, it’s super quick.  Two, it’s super easy.  And three, it’s full of sweet, honey-mustard flavor.  My husband loved it (even though he’s SICK of chicken) and my girls loved it, too.  I served it with a little spinach and strawberry salad and we had ourselves a perfectly lovely little meal.  Another bonus?  No oven.  It’s perfect for these hot summer evenings!

Honey Dijon Grilled Chicken
Yield:  4 servings
Prep Time:  5 minutes ♦ Cook Time:  12 minutes

Ingredients:
1/4 cup honey
1/4 cup Dijon mustard
2 Tablespoons fresh chives
1 and 1/2 Tablespoon olive oil
Salt
Pepper
4 chicken breasts (we buy two large breasts from the butcher counter and cut them in half)

Prepare grill.  Wash chicken breasts and sprinkle with a generous application of salt and pepper.

In a small bowl, whisk together honey, mustard and chives.  Slowly drizzle olive oil into mixture, whisking continuously to combine.  Set aside.

Place chicken breasts on grill.  Cook for 6 minutes, then flip.  Cook for another 6 minutes.  Brush with honey Dijon mixture, and flip.  Coat other side with honey mustard.  Remove from grill and allow to rest for 5 minutes before serving.  Drizzle with extra honey mustard if desired.
