Tuna & Noodles from Scratch
So, I don’t eat seafood. I’ve tried. I’ve really, really tried. There are a few swimming-things that I’ve taste-tested over the years that I didn’t absolutely detest, but I’d never order them for myself. Well, maybe, possibly a crab cake. But honestly, I’ll only eat it if my husband orders it – if it’s up to me, I can always find a more appetizing appetizer on the menu. I have done everything I can to ensure that my girls don’t have the same aversions to…

Honey Dijon Grilled Chicken
I make my weekly grocery store runs on Saturday or Sunday mornings, and every week, without fail I call my husband at work (he works funky hours) and ask if he has any special requests. The answer I get is usually something like, “Um…maybe some Salmon, Cod if they have it, um…chicken breasts…club soda, bananas…salad stuff…you know…whatever…the usual.” I’m not really sure what’s more frustrating, the fact that I get the same (unprepared) answer every single week, or the fact that I continue to call…

Chicken & Avocado Enchiladas
I don’t know about you, but we tend to get into a food rut during the summertime. We grill a lot, eat a lot of sandwiches, fruits and vegetables, and other generally “quick and easy” meals. It’s rare that we want to turn on the oven or heat up the kitchen, and the thought of eating anything hot is pretty unappealing. Because this dish not only requires me to turn on my oven, but also to actually eat something hot and mildly spicy in the…

Stuffed Crust Pizza
This has been an extremely busy month for my little family. Between my husband’s work schedule, birthdays, graduations, anniversary parties and my oldest daughter’s last days of Kindergarten (and all that comes with it), T-Ball, dance class and gymnastics, we’ve been running in a million different directions. Dinner has become almost an afterthought lately…let’s just say there have been a lot of turkey sandwiches and cereal for dinner this month. I know, I know. Bad food blogger. Today, I noticed we were on the same…

Pretzel Dogs
I generally don’t care for hot dogs. I won’t go into detail, but I pretty much find them to be wrong on many, many levels. That being said, there are moments in life when a hot dog sounds like a fantastic idea. For instance – sporting events. Hot dogs always taste good at baseball games, soccer games, basketball games, football games…well – I suppose they are always better when they come from a concession stand. My Dad makes an amazing grilled hot dog. He cooks…

Gnocchi with Roasted Red Pepper Cream Sauce
As I’ve mentioned in {previous posts}, I’m not a big seafood fan. But being desperate to not pass that on to my girls, my husband makes some kind of seafood for dinner at least once a week. I would really hate to deprive them of the health benefits of fish, so I don’t mind that they eat without me every once in a while. It’s usually on those nights that I get to whip up my own dishes that the rest of the family would…

Meatball Subs & Potato Chips
It wasn’t long ago that I told you about my love for sandwiches. Sometimes, I just get a craving and nothing will satisfy it until I just go out and get the real thing – and yesterday I almost caved. I wanted nothing more than to jump in the car and go find the closest meatball sub sandwich I could. But, since I found myself with a little bit of free time I decided instead to whip up some dinner – although I hadn’t made my weekly trip…

Spicy Chicken Hoagie
I am a huge sandwich fan – a HUGE sandwich fan. So much so that I could totally relate to Joey and his sandwich obsession on “Friends.” Speaking of Friends, do you remember the episode where Ross freaked out because someone ate his sandwich? The Moistmaker?? I do. And come Thanksgiving, there will totally be a Moistmaker recipe on this blog. You think I’m joking…I’m not. So yes, I love sandwiches. I think it’s probably just that I love bread, and you can’t really have a…

Broccoli Cheese Soup
Life has been a whirlwind in our household lately. With my oldest starting Kindergarten and all of the activities that go with it, my busy time of year at work, my husband’s insane work schedule, and nailing down our erratic daycare needs, we just don’t have a lot of normal family time lately. It will be a rare occasion in the next six weeks when we’re all home together at the same time. I’m determined to make sure we can enjoy a family dinnertime together as often as possible,…

Deep Dish Pizza
When I was growing up, my Mom owned a newspaper and publishing company. This was an awesome job for her because it gave her the flexibility to be home with the kids when she needed to. However, it also meant that once or twice a week she had to work later in the evening to cover city council meetings or hang out until the paper was ready to go to press. This meant that my Dad was responsible for dinner for 5 kids once or…

Turkey & Havarti Croissant Sliders
Oven-baked slider sandwiches are among my favorite party foods. For one, they are SUPER easy to make. Additionally, you can make them ahead of time and pop them in the oven when your guests arrive, so you aren’t left frantically prepping and finishing last-minute details. After a mere ten minutes in the oven, these are warmed through and the cheese is melty and bubbly. They’re awesome. I like Havarti with deli turkey because it’s a smooth, mild cheese and works really well with the pesto. I’ve…

Penne with Broccoli
Ok, so by now you know how much I love pasta. I could go the rest of my life without eating meat again, as long as I have pasta. And this recipe is one my favorites. I saw it on the Food Network ages ago and my husband was the first one to make it, and I fell in love. It’s good hot or cold, but I think I prefer it warm. I’ve adjusted the recipe depending on what we have and I’ve never been…
