Reuben Sliders with Homemade Thousand Island

I’m pretty excited to share this recipe with you.  It’s a good one.  I love sandwiches, and I especially love warm, ooey-gooey slider sandwiches.  And I really love a good Reuben.  This is like, the nexus of the sandwich universe.  Or something.

My family isn’t doing our annual St. Patrick’s Day dinner until next week sometime, so I know that tomorrow (on the actual holiday) I will want something corn-beefy to tide me over until next week when we can celebrate.  Since there is an abundance of basketball on this weekend as well, this also serves as a great sporting event food.  The sandwiches are small enough to be considered a “finger food” and the recipe makes a bunch of them so it’s easy to feed a crowd.  (Just double the recipe for 24 sandwiches.) Lots of times when I’m entertaining, I’ll prepare a bunch of these and keep them in the refrigerator  overnight. Then when my guests arrive I just pop them in the oven for a few minutes – it makes for an easy but tasty & stress free party food.

I’ve been meaning to make homemade Thousand Island dressing for quite a while now,  so this was really the perfect excuse.  I do have to say that the homemade version is much better than the store-bought, and it really enhances these sandwiches and gives them a little bit of a kick.  Plus, it’s only 4 ingredients so there’s really no excuse not to just whip it up.

If you decide not to go the homemade route, I would alter the recipe a bit – you might want to do Thousand Island on the top half of the sandwich and slather some mayo on the bottom half.  The mayo gives the sandwich a creaminess that really adds to the overall decadence of the sandwich, and I’m not sure you can replicate that with store-bought Thousand Island alone.

Be fairly liberal with the butter mustard sauce, and make sure you heat these until the cheese is completely melted.  Keep them covered until right before they come out of the oven, and try to serve them warm if at all possible.  Since I couldn’t find any Rye-Bread slider buns, I had to improvise a little bit, which is why I added the caraway seeds to the topping.  If you don’t like Rye Bread, don’t use the caraway seeds.  You can substitute poppy seeds if you like, or just omit them completely.

Reuben Sliders with Homemade Thousand Island
Yield:  12 sandwiches
Prep Time:  25 minutes ♦ Bake Time:  12 minutes
Reuben Slider Ingredients:
12 deli rolls of your choice.  Kaiser, Potato, Hawaiian, Dinner Rolls are all good choices.
Thinly sliced deli corned beef, about 1/4 to 1/2 pound for 12 sandwiches
12 slices good Swiss or fontina cheese
Homemade Thousand Island Dressing (see below)
Drained Sour Kraut
4 Tablespoons unsalted butter
1 Tablespoon Worcestershire sauce
1 teaspoon caraway seeds
1 Tablespoon dried, chopped onion
1 Tablespoon yellow mustard
In a glass measuring cup, melted butter in the microwave.  Whisk Worcestershire, caraway seeds, chopped onion and yellow mustard into melted butter.  Set aside.
Prepare sandwiches:  Cut deli rolls in half.  Liberally spread thousand island on both sides of each sandwich.  On the bottom bun, add meat, top with cheese, and spoon kraut on top.  Place top back on sandwich, and place on a large baking sheet.  Repeat with the rest of the sandwiches.
Once sandwiches are assembled and on the baking sheet, use a pastry brush to liberally brush the butter-mustard sauce over each bun.  If desired, sprinkle with additional caraway seeds.
Cover with foil, and bake for 10 minutes.  Remove foil and bake another 2 minutes or until cheese is melted.
Serve warm, and enjoy!
Homemade Thousand Island Ingredients:
1 cup mayonnaise
1/2 cup chili sauce
2 Tablespoons sweet pickle relish
2 teaspoons horseradish
Combine all ingredients with a whisk.  Store in the refrigerator for up to 2 weeks.
Enjoy!
