It’s hot outside. And not just summer-in-the-Midwest-is-always-hot-and-humid-so-deal-with-it-hot, it’s REALLY hot. It’s so hot that just walking outside will take your breath away, getting in a car with leather seats will literally burn your legs, and swimming pool water feels like bath water. Blech.
Needless to say, I have no desire to turn my oven on lately. In fact, we don’t want to do much of anything lately. I feel bad for those folks who have to work outside in this – it seems like cruel and unusual punishment.
Since I know the majority of the country is in the same boat as we are, I thought I’d share one of my favorite summer drinks with you. If you like frappucinos – this is for you. Frozen coffee? You’ll love it. Mudslides? Yup – you too. This is creamy, with a very slight coffee undertone. The milk and coconut rum blend nicely and elevate the decadence in the drink. And while you can certainly leave the whipped cream and caramel off – just try it once with it on. (It’s ok if you take my name in vain while you’re drinking it. I totally understand.)
Low-cal? No sir-ee. But dang it – I’m sure you’ve sweated enough today to have earned this, so please do yourself a favor…sit on the couch and sip on this bad boy for a while.
I do have to give my husband credit for this drink. He’s quite the bartender, and even though I like to tease him that he likes “girly” drinks, it’s fun to see what he comes up with. This one is definitely a winner!

Ingredients:
1 shot glass coffee-flavored liqueur (such as Kahlua)
1 shot glass coconut rum (such as Malibu or Captain Morgan’s Parrot Bay)
1 cup milk or cream (or more or less, to taste)
Whipped Cream
Caramel Sauce
Ice
Fill a 12-16oz glass 1/2 full with ice. Add 1 shot glass full of coconut rum to 1 shot glass of coffee liqueur. Stir. Top glass off with approximately 1 cup of cold milk. (Add more milk for a weaker alcohol flavor, less for a stronger alcohol flavor.) Stir. Top with whipping cream and a drizzle of caramel.
