Deep Dish Pizza

When I was growing up, my Mom owned a newspaper and publishing company.  This was an awesome job for her because it gave her the flexibility to be home with the kids when she needed to.  However, it also meant that once or twice a week she had to work later in the evening to cover city council meetings or hang out until the paper was ready to go to press.  This meant that my Dad was responsible for dinner for 5 kids once or twice a week.  Dinner on “Dad nights” was always the same thing – oven baked hot dogs and french fries or pizza.  I still, to this day, love my Dad’s pizza.  I crave it sometimes, but mine never tastes like his (that’s always how it is, isn’t it?)  Dad still makes pizza occasionally, and I LOVE it when I’m home visiting on those nights!!
This pizza is really nothing like my Dad’s,  but it definitely reminds me of pizza nights from my childhood.  I saw this recipe yesterday on one of my favorite food blogs and I couldn’t stop thinking about it for the rest of the day.  I knew I had the ingredients on hand, but didn’t know if I would have time to make the dough, let it rise, etc. in time for the girls and I to eat dinner.  It actually went together very quickly and we made it in plenty of time.
My house smelled SOOOOO good while it was baking…waiting for it to rest after it came out of the oven was pure torture.  And the best thing about it?  I have another crust in the refrigerator waiting to be used!  I can’t wait to play with the toppings next time, the possibilities are endless.  While my waistline can’t afford for this to become a weekly meal, I’m hoping that my kids (who both loved this, by the way) will have some of the same dinnertime memories that I have – of not only good food but also some special memories of family time.

Pizza Dough Ingredients: (makes two pizza crusts)
1 and 1/3 cups warm water

1 packet yeast

3 and 1/2 cups all-purpose flour
2 teaspoons salt
1 teaspoon sugar
2 Tablespoons extra-virgin olive oil

Dissolve yeast in warm water.  Let sit for 5 minutes.  Meanwhile, combine flour, salt, sugar and olive oil together in a large bowl.  After 5 minutes, add yeast-water to flour mixture.  Stir with a fork until mixture comes together.  Knead by hand for 7-8 minutes.  Split dough into two equal parts.  Roll each piece of dough into a neat ball and place each ball into their own oiled bowl, seam down.  Coat top of ball with a small amount of oil (or cooking spray) and cover with plastic wrap.  Let rise for 2 hours in a warm place.  (I pre-heated oven to 200 degrees, then turned it off and let the dough rise in the warm oven.)

Divide the dough into two equal size piences.  At this time, you can store it for future use by wrapping in plastic wrap and a baggie.  Store in the fridge or freezer.  Or, go ahead and make it now:

Preheat oven to 400 degrees.  Coat the bottom of an oven-safe skillet with about 1 1/2 – 2 Tablespoons of olive oil.  Stretch pizza dough (without overworking it) over the bottom and sides of the pan.

Pizza Toppings (as pictured, toppings for one pizza):
2 cups freshly grated mozzarella cheese
6 oz ground, browned sausage
14 oz can canned diced tomatoes, drained
8 oz black olives, roughly chopped
Sprinkle of kosher salt
Freshly ground black pepper
Garlic powder
Dried oregano

Cover pizza crust with half of grated cheese.  Spread tomatoes in an even layer over cheese.  Season tomatoes with salt, pepper, garlic powder and dried oregano, to taste.  Add olives and the remaining cheese.  Top with sausage.

Bake in 400 degree oven for 30 minutes.  Resist the urge to take it out earlier to avoid an undercooked crust.  If the edges get too dark, you can cover with a pie crust shield or a piece of foil.

Let pizza sit for 5-10 minutes before serving.
