So, I have a confession to make. I don’t care for seafood. Admittedly, I have had a bite or two off my husband’s plates over the years that didn’t make me gag, but generally speaking, I can’t do fish – cooked or raw, shell or not – it’s not happening. For this reason, growing up in the Midwest has proven to be to my advantage – I have a lot of other protein options and a good steak is far more prevalent than any seafood fare on the menu.
However, being the doting wife that I am :), I’ve accompanied my husband to a number of seafood restaurants over the years. My favorite part of these establishments is always the appetizers. They’re always hearty, decadent and rich. We visited a restaurant on the coast in North Carolina and their hush puppies dipped in honey butter are among my all-time favorite foods. Needless to say, it’s not all that hard to get me in a seafood restaurant.
You’re all probably familiar with these biscuits – they’re served with every meal at a large seafood chain. And I could eat about a hundred of them.
These are cheddar biscuits – soft, crumbly biscuits laced with cheddar cheese and topped with a buttery, garlicky sauce. They’re best served warm, right of the oven – perfect with a big bowl of soup, chili or just own their own. (Or, I suppose, with seafood. But I wouldn’t know.) I actually tried to make these with my favorite drop-biscuit recipe but they weren’t the same. As much as I try to avoid using boxed mixes, I’m afraid that this recipe is best if you just follow the recipe. I know, it hurts me too.
The best part about these is that you can make them start to finish in less than 30 minutes. If you need a quick side dish or just a big, cheesy plate of carbs, give this recipe a try!
Preheat your oven to 400 degrees. Lightly grease or line one cookie sheet with parchment or a silpat mat, and set aside.
While they’re baking, combine melted butter, dried oregano and garlic salt in a small bowl. After the 8-10 minutes is up, remove from the oven and brush generously with the butter mixture. Return to the oven for 2-3 more minutes.
Serve warm.
