Uncharacteristic trait of a food blogger number 982: I don’t really like eggs. Clearly, I eat my fair share of them in baked goods, and I even enjoy quiche. Plain old eggs, though, I can’t really get behind.
Runny yolks? Don’t get me started. (But why? Why would you eat runny yolks? Help me understand!)
One of my very favorite things in the whole wide universe used to be my Mom’s homemade eggnog. Then, I discovered that it was made from raw eggs. I haven’t had it since. Something is wrong with me.
However, occasionally I do come across a good egg sandwich that temporarily lets me forget that I don’t really like eggs. When my husband and I bought some delicious Ciabatta rolls this week, they just screamed breakfast sandwich to me. So, I whipped this up and fell in love with it.
There’s something about Ciabatta bread. It’s mildly crusty exterior is perfect for toasting, and sturdy enough to support any sandwich you can dream up. The rest of the roll remains chewy and soft, absorbs the flavors of the sauces and dressings, and will take your favorite sandwich to a new level.
The great thing about this quick breakfast is that you can really customize it any way you like. Change the cheese, nix the bacon, add sliced avocado – whatever you like. Make it healthier with egg whites and turkey bacon, or add a sausage patty and up the decadence. Your sandwich.

Bacon, Egg & Pepper Jack Sandwich on Toasted Ciabatta
Yield: 1 sandwich
Prep Time: 15 minutes ♦ Bake Time: n/a
Ingredients:
- 1-2 eggs
- 2 Tablespoons half & half
- Salt & pepper, to taste
- 1 slice pepper jack cheese
- 1 Ciabatta roll, sliced, buttered and toasted
- 2 slices bacon
- Baby spinach
- 2 teaspoons butter
Directions:
Slice a Ciabatta roll in half, and toast lightly, then butter generously. Set aside.
Cook bacon to desired crispiness. You can fry it in a skillet, or bake it in the oven. Set aside.
Heat a non-stick skillet to medium-high heat. Melt 2 teaspoons of butter. Meanwhile, whisk together eggs and half & half in a small bowl. Lightly salt and pepper. Pour eggs into skillet, and allow to cook flat, like a crepe. You may flip the egg if desired, or just cook on one side to desired doneness. Use a flat, plastic spatula to fold the egg into quarters. Top with pepper jack cheese slice, and allow to sit for 20 seconds while still in the pan, the remove from heat.
Place a layer of spinach on bottom layer of bread. Top with egg and cheese, salt and pepper to taste, then layer the bacon on top and cover with the top roll. Serve warm.
