Stuffed Crust Pizza

- 2¼ teaspoons (1 packet) active dry yeast
- ½ teaspoon brown sugar
- 1 teaspoon garlic powder
- 1 and ½ cups warm water (110 degrees F/45 degrees C)
- 1 and ½ teaspoons salt
- 2 tablespoons olive oil
- 3 and ⅓ cups all-purpose flour
- 6 mozzarella cheese sticks
- Olive oil, for brushing crust
- Pizza sauce, cheese and toppings as desired.
- (I used about 1 cup of pizza sauce, 8oz of grated cheese and turkey pepperoni.)
- In the bowl of your stand mixer fitted with the dough hook, combine warm water, yeast and brown sugar.
- Stir, then allow to sit for 10 minutes.
- Add flour, salt and olive oil to yeast mixture.
- Knead with dough hook until the dough comes together and forms a tacky ball, but does not stick to the bowl.
- If needed, add a Tablespoon of flour at a time until correct consistency is met.
- Form the dough into a ball and place in a well-oiled bowl in a draft-free, warm space.
- Allow to rise for one hour or until doubled in bulk.
- Preheat the oven to 425 degrees.
- Roll the dough out to slightly bigger than the size of your pizza pan.
- Place a mozzarella stick around the perimeter of the crust, then roll the edges of the crust around the cheese stick.
- Pinch dough to close.
- Poke holes in the crust with a fork, then par-bake for 5 minutes.
- Remove crust from oven, then top with your favorite toppings.
- Brush crust with olive oil.
- Bake for 20-25 minutes or until crust is golden brown and cheese is melted.
