Easy Lemon Bars

A delicious shortbread crust is topped with a creamy, tangy lemon curd. The lemon is perfectly sweet and tart and topped with a sprinkle of powdered sugar.

Ingredients
  • 2 cups all-purpose flour
  • ½ tsp salt
  • ½ cup powdered sugar
  • 1 cup butter, softened
  • 4 eggs
  • 1 and ½ cups granulated sugar
  • 1 tablespoon lemon zest
  • ⅓ cup lemon juice
  • ¼ cup all-purpose flour
  • powdered sugar, for dusting
Instructions
  1. Preheat oven to 350 degrees (F).
  2. Prepare a 9x13 baking pan with foil or parchment, leaving about 1 inch of foil extending over the ends.
  3. In a large bowl, stir together the flour, salt and powdered sugar.
  4. Add the softened butter and beat with an electric mixer on low to medium speed just until mixture begins to cling together. It should be crumbly.
  5. Press into the bottom of prepared baking pan. I used the bottom of a drinking glass to help keep it even.
  6. Bake about 25 minutes or until just lightly browned around the edges. Don't overbake!
  7. Meanwhile, in a medium bowl, beat eggs with a whisk.
  8. Add sugar and lemon juice and whisk until well mixed.
  9. Whisk in the ¼ cup flour and the lemon peel until lumps disappear from the flour.
  10. Pour over baked crust.
  11. Bake about 20 minutes more or until edges begin to brown and center is just set.
  12. Cool in pan on a wire rack.
  13. Remove bars from pan, using the overlapping foil or parchment to lift from pan.
  14. Sift additional powdered sugar over top.
  15. Cut into bars, and enjoy!
