Funfetti Cupcakes with Vanilla Buttercream

Adorable funfetti cupcakes made from scratch are easy and delicious, and perfect for celebrating! Cupcake recipe slightly adapted from: Sift & Whisk
Serves: Approx 24 cupcakes
  • 3 and ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 cup unsalted butter, melted
  • 2 large eggs
  • ½ cup sour cream
  • 1 and ½ cups 2% or whole milk
  • 4 teaspoons vanilla extract
  • 1 cup sprinkles
  • 1 and ½ cups (3 sticks) unsalted butter, softened
  • ⅓ cup whipping cream
  • dash of salt
  • 2 teaspoons vanilla extract
  • 2 lb bag confectioners' sugar (about 7-8 cups)
  • sprinkles, as desired
  1. Preheat oven to 350°F. Line standard muffin tins with cupcake liners.
  2. Whisk flour, baking powder, baking soda, and salt together in a large bowl; set aside.
  3. In the bowl of a stand mixer, mix sugar and melted butter until combined, about 1 minute.
  4. Add eggs, one at a time, and mix until just combined, then add vanilla.
  5. With the mixer speed on low, add one third of the dry ingredients to the mixing bowl, followed by the sour cream.
  6. Add another third of the dry ingredients, then slowly pour in the milk.
  7. When all the milk is incorporated, add the remaining dry ingredients. Mix until just combined.
  8. With a rubber spatula, stir in rainbow sprinkles.
  9. Fill cupcake liners about two-thirds full.
  10. Bake for 18-22 minutes, or until toothpick inserted in the center cupcake comes out clean. Transfer to a wire rack and let cool in pan for 10 minutes, then place cupcakes directly on rack to cool completely.
  1. In the bowl of a stand mixer, beat butter until light and fluffy, about 3-4 minutes.
  2. Add confectioners'sugar and cream, and beat on low until just combined.
  3. Add vanilla and salt, and beat on high speed until completely combined and fluffy. Add more cream or confectioners' sugar to desired consistency, if necessary.
  4. Frost as desired, and top with sprinkles.
  5. Enjoy!
