Just Cherry Pie

Serves: 1 9-inch pie, approx 8 servings
- Ingredients:
- Two-Crust Pie (my recipe can be found here)
- 3 cans pitted, tart pie cherries, drained
- 10 teaspoons corn starch
- 1 and ¾ cups sugar
- 3 Tablespoons lemon juice
- ½ teaspoon almond extract
- 3 Tablespoons butter
- Preheat oven to 375 degrees. Prepare 9-inch pie plate (I used a deep dish) with pie crust.
- In a medium, non-aluminum saucepan, combine cherries, sugar and cornstarch.
- Let sit for 10 minutes.
- Over medium heat, bring cherry mixture to a boil, stirring constantly.
- Add lemon juice, almond extract and butter.
- Stir until combined, and immediately pour into pie crust. Top with additional pie crust, pinch crust to seal and cut slits on the top of the pie.
- Bake for 45 - 55 minutes, using foil or a pie shield to prevent crust from over-browning.
- Cool to room temperature, then serve.
