Just Cherry Pie

Just a cherry pie! A simple, basic recipe, but sure to be loved by all!
Serves: 1 9-inch pie, approx 8 servings
Ingredients

  • Two-Crust Pie (my recipe can be found here)
  • 3 cans pitted, tart pie cherries, drained
  • 10 teaspoons corn starch
  • 1 and ¾ cups sugar
  • 3 Tablespoons lemon juice
  • ½ teaspoon almond extract
  • 3 Tablespoons butter
Instructions
  1. Preheat oven to 375 degrees. Prepare 9-inch pie plate (I used a deep dish) with pie crust.
  2. In a medium, non-aluminum saucepan, combine cherries, sugar and cornstarch.
  3. Let sit for 10 minutes.
  4. Over medium heat, bring cherry mixture to a boil, stirring constantly.
  5. Add lemon juice, almond extract and butter.
  6. Stir until combined, and immediately pour into pie crust. Top with additional pie crust, pinch crust to seal and cut slits on the top of the pie.
  7. Bake for 45 - 55 minutes, using foil or a pie shield to prevent crust from over-browning.
  8. Cool to room temperature, then serve.
  9. Enjoy!
