Snickerdoodle Muffins

So, I woke up this morning and completely forgot that it was my anniversary.

I called my husband after I dropped the princess diva-queen off at school, and I didn’t even say Happy Anniversary or anything.

But, neither did he…so clearly he forgot too, right?

Then, I’m at work and my phone notification pings and I see that he posted some really nice words about me on Facebook.

Whoops.

So, of course I did what any loving wife would do – I immediately reciprocated and posted even nicer words about him, with a picture of our wedding day and everything.  Even-Steven.

Now, we never really exchange gifts on our anniversary, so it’s not like I forgot to get him a gift, but me, obsessive-controller-planner-of-every-second-of-EVERYONE’s-life, me?  I forgot our anniversary?

Who does that?

Now, in an effort to satiate my own guilt, I’m planning to make him a big fancy dinner and act like I was totally just waiting for him to “remember” first.

Well, ok, in all honesty, I’m making meatloaf for dinner.  That just screams, “I’m sorry I forgot the anniversary of our public declaration of love and commitment,” doesn’t it?

Meatloaf is powerful stuff.  Maybe I’ll serve it with some wine.

Speaking of the happiest day of my life, here’s one of my favorite pictures from the day.  This was taken during the last dance of the evening, and we were dancing to our song.

It really was a great day, and it’s been an even better eight years.  Don’t tell him I forgot our anniversary, ok?

Let’s talk about muffins instead.

We’ve been on a bit of a muffin-kick around here lately.  My girls have grown tired of the usual weekday breakfast rotation so I’m trying to mix things up a bit for them.  We started with the pumpkin cream cheese muffins, then the cranberry walnut muffins, and this week we tried these – snickerdoodle muffins.

As far as muffins go, the recipe was very easy and straightforward, the only extra step was that you have to roll the batter in a cinnamon-sugar mixture to give it the signature snickerdoodle look and taste.

Huge hit.  HUGE, huge hit.  The girls loved them.  In fact, they’re almost gone already.

Snickerdoodle Muffins
Yield:  16-20 muffins
Prep Time:  25 minutes ♦ Bake Time:  18 minutes

Ingredients:

  • 2 and 1/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon cream of tartar
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup (16 tablespoons) unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 cup sour cream
  • 1/4 cup buttermilk
For the Topping:

  • 2/3 cup sugar
  • 2 tablespoons cinnamon

Directions: 

Preheat oven to 350 degrees (F).  Line two muffin pans with liners and set aside.

In a large bowl, whisk together dry ingredients:  flour, baking powder, baking soda, salt, nutmeg and cream of tartar.   In another large bowl, beat/cream together softened butter and sugar until pale in color and fluffy.  Add eggs, one at a time beating well after each addition.  Add vanilla extract and beat to combine.  Add half of the flour mixture, and beat until just combined.  Don’t overbeat.  Add the sour cream and buttermilk, and beat until just combined, then add remaining flour.  Beat until just combined.
In a medium bowl, combine sugar and cinnamon for topping.  
One at a time and using an ice-cream scoop, scoop a ball of batter into the sugar/cinnamon mixture. Use the bowl to swirl and coat the entire ball of batter with the mixture.  Using a spoon, transfer the coated ball into a muffin liner, and repeat until you’ve used all of the batter.  Sprinkle the leftover cinnamon and sugar over the tops of the muffins.
Bake for 18-22 minutes or until golden brown and a cake tester comes out clean.  Cool on a wire rack.  Store in an airtight container for up to three days.

    We’re watching the KState/KU game with some friends this weekend (the friends are HUGE KU fans -thought you’d appreciate that little tidbit). These muffins will be PERFECT for our little game day party, considering the game starts at NINE AM our time (belch)!
