I’m sorry. I know that it’s a new year, and I know that your resolution to eat healthier is already nagging at you, but I just couldn’t let this one pass. One minute chocolate cake? Yes. I made it, topped it and ate it all under five minutes.
I’m not ashamed.
Now, if I’m really being honest, this actually took a little longer than one minute to make. It took two and a half minutes. I used a small glass bowl, a small whisk and my measuring spoons, and a small, 4 ounce ramekin, and I started timing myself before I even got any ingredients out. I nuked it in the microwave for about 45 seconds and topped it with Extra Creamy Redi-Whip. I’m classy like that.
When I took my first bite, I actually said, “Oh my goodness…” out loud to an empty room (well, empty except for my dog, who looked super-jealous.) It’s fabulous, especially for the five minutes I invested. Don’t have a ramekin? Use a little glass dish, or even a coffee mug. Start with 30 seconds in the microwave, and add 10 seconds at a time until the middle of the cake is firm.
You can top it as you wish – using chocolate frosting, chocolate syrup, caramel, whipped cream, ice cream – whatever your impatient little heart desires.

1 Tablespoon plus 2 teaspoons cocoa powder
3 Tablespoons all-purpose flour
1/8 teaspoon salt
1 Tablespoon plus 2 teaspoons sugar
1/4 teaspoon baking powder
1 Tablespoon vegetable oil
3 Tablespoons milk (I used 1%)
1/4 teaspoon vanilla extract
Combine all dry ingredients (cocoa powder, flour, salt, sugar and baking powder) in a small bowl, and whisk to completely combine. Add the wet ingredients (oil, milk and vanilla) and whisk until mixture comes together completely.
Pour mixture into a microwave-safe dish (I used a 4 oz ramekin and it was the perfect size) and microwave at full power for 30-45 seconds, or until the middle of the cake is just slightly firm.
Allow to cool for a few seconds, then top with your topping of choice.
